Holy Taco!! is more than just a food truck; it is a vibrant, casual celebration of authentic Mexican cuisine. Our journey is a culinary tribute to the roots of our founder, Ileana, born in the heart of Jalisco, Mexico.

With over 15 years of experience in high-end restaurants and resorts across Mexico, Ileana brings a "living canvas" of culture to the streets of the Lower Mainland. Specializing in the legendary art of Birria, we hand-select only the finest, unprocessed ingredients to share the most authentic Mexican tacos and traditional dishes with our community.

A Heritage Passed Down Through Generations

The soul of Holy Taco lies in a sacred family recipe passed down from Ileana’s grandmother, Eva Chavez. Every bite of our Birria carries the history and love of our ancestors.

Our story began on July 1, 2022. What started as a vision for a Canada Day event quickly transformed into a local sensation. Fueled by Bradley’s charisma and their shared commitment to crafting a 100% authentic Mexican experience, they launched a food stand that would soon become a pillar of the Vancouver street food scene.

Driven by Passion and Remembrance

Ileana’s passion for cooking began at the age of 10, cooking for her siblings with a sense of responsibility and love. Her life was deeply influenced by her father, Alberto Lopez, the iconic pianist and rockstar of the legendary 1970s band "Toncho Pilatos" in Guadalajara.

Today, the memory of her parents—symbolized by the essence of “La Muerte”—serves as the guiding inspiration for her craft. With Bradley’s unwavering encouragement, Ileana turned her dream into a reality, bringing the traditions of a Mexican neighborhood to Canada. Holy Taco & Mexi Eats is her way of sharing culture, culinary love, and the spirit of Jalisco on wheels.
